Cara cara oranges are now in the local supermarkets.
While the outward appearance of a cara cara looks like a traditional navel orange, peeling the winter fruit reveals its distinctive deep ruby color. Cara caras are lower in acidity than navel oranges, and have a taste that is sweet and tangy.
I first noticed this fruit when it appeared on Evangeline's opening night menu - nearly one year ago. The distinctive orange sections were caramelized and paired with a red endive to create a sweet and savory accompaniment to the main entree, Orange Duck.
Cara caras are only in season for a short time (typically December through April); get them while you can.
